Our dishes result from a precise philosophy: raw material of first choice, simple cooking, though surprising in its contents and display. He buys the vegetables from the farmer everyday: tomatoes, peppers, aubergines, courgettes. Then he goes to the harbour of Porto Cesareo where he buys the just fished fish from the boats. The extra virgin oil, instead is produced at the Masseria.
Both the typical dishes in accordance with the traditional recipes, such as orecchiette with turnip tops ,as well as chickpeas with home made pasta born from his personal talent at mixing landfare and sea flavours ask all guest to forget time and enjoy a slow meal. Vincenzo is never tired to search for the balance of dishes, to try new recipes and surprise with original menus.
